Fennel & Sausage Pasta

Ingredients

1 tsp of fennel seeds toasted and ground

3 garlic cloves minced

1 tbsp of tomato paste

1 tsp minced chilli

4 sausages

1 small onion

1 tin of tomatoes

100ml double cream

50ml white wine or chicken stock

Parmesan

Basil

Directions

- Toast and grind fennel seeds

- Take sausage out of casing make into little clumps or balls, cook and remove from pan

- Dice onion and cook until soft

- Add garlic and chilli cook 60 seconds

- Add spices and tomato pasta cook for 60 seconds

- Deglaze with wine or stock

- Add tinned tomatoes and reduce

- Add cream and Parmesan to taste and reduce

- Cook pasta

- Add pasta water to turn saucey

- Add cooked pasta and basil

- Serve with extra Parmesan
