Broiled Asparagus

Ingredients

1 pound asparagus, trimmed

1 tablespoon extra-virgin olive oil

½ teaspoon table salt

¼ teaspoon pepper

1 teaspoon lemon juice (optional)

Directions

Adjust oven rack 6 inches from broiler element and heat broiler. Toss asparagus with oil in bowl and season with salt and pepper. Lay asparagus in single layer on rimmed baking sheet. Broil, shaking pan occasionally, until asparagus is tender and lightly browned, about 10 minutes. Transfer asparagus to platter and sprinkle with lemon juice, if using. Serve.

VARIATIONS Broiled Asparagus with Balsamic Glaze Simmer ¾ cup balsamic vinegar in 8-inch skillet over medium heat until reduced to ¼ cup, 15 to 20 minutes. Off heat, stir in ¼ cup extra-virgin olive oil; drizzle over broiled asparagus before serving.

Broiled Asparagus with Soy-Ginger Vinaigrette Substitute vegetable oil for olive oil. Whisk ¼ cup lime juice (2 limes), 3 tablespoons toasted sesame oil, 3 tablespoons soy sauce, 2 thinly sliced scallions, 2 minced garlic cloves, 1 table- spoon grated fresh ginger, and 1 tablespoon honey together in bowl; drizzle over broiled asparagus before serving.
