Scrambled Eggs in Puff Pastry

Ingredients

1 frozen puff pastry sheet, thawed

8 eggs

¼ cup heavy cream

½ tsp salt

2 Tbsp butter, divided

1 cup shredded colby or Swiss cheese

2 Tbsp grated Parmesan cheese

Chives, to garnish

Directions

I. Preheat the air fryer to 375 degrees F.

2. Unfold the puf pastry sheet and place on a lighty floured surface. Press out the fold lines

and cut into 9 squares.

3. Drape the pastry over upside-down greased custard cups and press to form. Air fry for 4 to 8 minutes or until pastry is set and light golden brown. Carefully remove from the custard

cups and invert onto a wire rack to cool. A. Turn the air fryer to 350 degrees and beat the eggs with the cream and salt in a medium bowl.

6. Melt half the butter in a 6 inch cake pan. Add half the eggs and air fry 8 to 12 minutes, stirring every a minutes, unti set; remove to a bowi. Repeat with remaining eggs and butter.

6. Divide the scrambled egg mixture among the puff pastry shells and top with the cheeses. Place in a single layer in the air fryer. it you have a smaller air fryer, you will need to cook in batches.

3. Air fry for 5-8 minutes or unil the cheese melts and starts to brown
