Sweet Potato Chocolate Fudge

Sweet Potato, cooked, 500g, 17.6oz

Dark Chocolate, chopped, 100g, 3.5oz

Dark Chocolate, melted for topping, 40g, 1.4oz

Directions

Preheat oven to 225°C, 435°F. Wrap the sweet potato in foil and bake for around 60 minutes until extremely soft.

While still hot, cut the sweet potato open and place into a bowl or container.

Add the chopped dark chocolate and allow it to melt from the heat of the potato.

Mash everything together with a fork until smooth and thick like fudge batter.

Spread evenly into a lined container or tray.

Melt the extra chocolate and spread over the top.

Refrigerate for at least 3 hours until firm.

Slice and serve cold.
