Simple bowl, big payoff.
Crispy tempeh, steamed broccoli, and a peanut–lime sauce that ties everything together — balanced, filling, and perfect for everyday meals.
Ingredients (1 serving)
For the bowl
70 g dry brown rice
180 g tempeh, cubed
200 g broccoli florets
1 tsp neutral oil
Salt & black pepper
For the peanut–lime sauce
1 tbsp natural peanut butter
1 tbsp soy sauce
1 tsp lime juice
½ tsp grated ginger
½ tsp garlic powder
80–100 ml water (to thin)
Chili flakes, to taste
Directions
Cook brown rice in salted water according to package instructions, drain
Steam broccoli for 4–5 min until tender but still bright green
Heat oil in a pan and fry tempeh 5–6 min until golden and crispy, season lightly
Whisk peanut butter, soy sauce, lime juice, ginger, garlic powder, chili and water until smooth
Add sauce to the pan and warm gently 1–2 min
Serve tempeh and broccoli over rice, spoon sauce on top
