Tips for this recipe:
Use regular pumpkin, not organic (organic pumpkin has a stronger pumpkin taste).
sweet potato puree is the best alternative
Replace monkfruit with any granulated sweetener.
Use dark cocoa powder for best flavor. (Dark cocoa also hides the pumpkin better).
Use a high quality protein that mixes well (my fav is 1UP)
Do not overbake or they will lose fudginess! take them out right when toothpick comes out clean.
Put them in the fridge! The texture
and flavor is even better chilled.

1 cup (240g) pumpkin purée
1 cup (227g) Greek yogurt
2/3 cup (100g) monkfruit
2 eggs
1 tsp (3g) vanilla
1 cup (80g) dark cocoa powder
2 scoops (74g) protein (I used @1upnutrition protein in birthday cake - code fitfoodieđź’–)
Frosting)
1 cup (227g) 0% Greek yogurt
1/3 cup (48g) powdered monk fruit
1/2 scoops (19g) protein (I used 1UP protein in birthday cake - code fitfoodieđź’–)
1-2 tbsp sf jelly-o pudding mix (optional but makes it thicker)
Toppings)
4 Oreo thins
2 tbsp + 1 tsp oil for chocolate drizzle (optional)
Directions
Preheat oven to 350F
Mix brownie ingredients.
Pour into pan (9”X9”) and bake for 45 min or until set (do not overbake or it’ll ruin fudginess)
Mix frosting ingredients and frost brownies then top with oreos and chocolate. (If you want chocolate drizzle melt chocolate and oil in microwave in 30s increments).
Cut into four pieces to make squares.
