This Tuscan Chicken Pasta

Ingredients

For the Chicken:

2 boneless, skinless chicken breasts (or thighs), sliced

1 tsp salt

½ tsp black pepper

1 tbs smoked paprika

½ tsp garlic powder

3 tbsp olive oil

For the Pasta & Sauce:

8 oz pasta (thin spaghetti,penne, fettuccine, or pici)

3 tbsp butter

3 cloves garlic, minced

1 small onion finely chopped

½ cup sun-dried tomatoes, chopped

2 tablespoons tomato paste

1 cup heavy cream

½ cup chicken broth

½ cup grated Parmesan cheese

1 tsp Italian seasoning

½ tsp red pepper flakes (optional, for heat)

1 handful fresh spinach

½ cup pasta water (if needed)

Fresh basil & extra Parmesan for garnish

Directions

Boil pasta in salted water until al dente. Reserve ½ cup of pasta water before draining.

Season chicken with salt, pepper, smoked paprika, and garlic powder. Heat olive oil in a pan over medium-high heat and sear for 3-4 minutes per side until golden brown. Remove and set aside.

In the same pan, melt butter and sauté garlic, onions and sun-dried tomatoes for 1-2 minutes. Pour in chicken broth, scraping up any browned bits. Add heavy cream, Parmesan, Italian seasoning, and red pepper flakes,Stir in spinach and let it wilt.

Add the cooked pasta to the sauce. Toss to coat, adding a splash of pasta water if needed for consistency.

Plate the pasta and add the cooked Chicken on top.

sprinkle some more Parmesan cheese,Serve immediately!
