Spaghetti & Spinach with Sun-dried Tomato Cream Sauce

Ingredients

12 oz spaghetti

1 tbsp olive oil

1 small red onion, finely chopped

2 cloves garlic, minced

½ cup sun-dried tomatoes, oil-packed, chopped

4 cups fresh baby spinach

½ cup chicken or vegetable broth

1 cup heavy cream

¾ cup grated Parmesan cheese

¼ tsp red pepper flakes

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Directions

Cook spaghetti according to package directions; drain and set aside. In a large skillet, heat olive oil and sauté onion until soft. Add garlic and sun-dried tomatoes and cook 1 minute. Pour in broth and heavy cream, then stir in Parmesan cheese until smooth. Add spinach and cook until wilted. Season with red pepper flakes, salt, and black pepper. Toss cooked spaghetti into the sauce until well coated. Garnish with fresh basil before serving.
