Chipotle Marry Me Chicken Linguine

An easy dinner recipe for 510 calories per portion and 40g protein
Ingredients (serves 2):
200g chicken breast
Onion powder
Garlic powder
Smoked paprika
Oregano
Salt
Pepper
120g dry linguine
Small diced white onion
Tsp garlic puree
Tsp tomato puree
Tsp chipotle paste
100ml chicken stock
40g sun-dried tomatoes roughly chopped
100ml 45% less fat cream
10g parmesan
Pasta water
Fresh parsley chopped
Directions
Season the chicken in tsp onion powder, tsp garlic powder, tsp smoked paprika, tsp oregano, salt and pepper. Pan fry for 4 minutes each side until there is a nice sear. Remove from the pan.
Boil the pasta.
In the frying pan, start on the sauce by adding frying off the onion until slightly softened and then add the garlic puree, chipotle paste, tomato puree, chicken stock, sun-dried tomatoes, cream, a tsp smoked paprika and oregano. Mix well and return the chicken to the pan for ten minutes until the sauce has reduced.
Once reduced, remove the chicken, stir through the parmesan and loosen with pasta water (I used 80ml).
Top the cooked pasta with the chicken, any leftover sauce and parsley chopped.
