Thai-Style Ground Meat & Veg (Larb)

1.25 lb ground meat
2 green bell pepper
0.5 lb green beans
1 bunch green onion
10 mint leaves, chopped
1 lime
1/4 cup soy sauce
1/4 cup fish sauce
1tbsp gochujang paste
Fresh cracked black pepper
1 cup white rice
Directions
Begin preparing white rice. Prepare meat and vegetables as rice is cooking.
Cut bases of green onions into quarters. Cut greens of green onions into 3-5 pieces, depending on their length. Cut green beans into thirds. Cut green peppers into large chunks. Juice lime.
Heat oil in a large high-sided pan on high heat. Add cracked black pepper. As pepper begins to sizzle, add ground beef and bases of green onions. Sauté until beef starts to release moisture.
Add soy sauce, fish sauce, gochujang, and lime juice. Stir until combined and adjust to medium-low heat.
Add greens of green onions to pan. Allow pan to simmer, stirring occasionally. As sauce reduces, adjust to low heat.
Heat oil in a separate frying pan on high heat. Add cracked black pepper. As pepper begins to sizzle, add green peppers and green beans and stir, lightly salting them once coated with oil.
Allow green peppers and green beans to brown and blister, stirring occasionally but not too frequently.
Once most green peppers and green beans are browned and blistered on at least one side, turn heat off and add these vegetables to the high-sided pan. These vegetables should still be somewhat crisp, not fully softened.
Stir green peppers and green beans into the beef/onion mixture until coated with sauce. Remove from heat.
Add rice to plates. Top the rice with the meat and vegetable mixture. Garnish with a mint leaf and a lime wedge.
