Scalloped Potatoes

Directions

Thinly slice potatoes into a roaster or casserole. Add salt. Use 1/3 cup heavy cream and 2/3 cup hot water.. Use enough of this mixture to almost cover the potatoes. I sprinkle a little flour over layers of the potatoes. Never use milk for scalloped potatoes as it will curdle. On the farm I used straight cream and no flour. They were always creamy and good. Add ham slices if desired. The ham tends to make your liquid more runny.

Also if you want to speed up the potatoes, heat them on top of the stove then put them in the oven. Bake at 375 until tender. It usually takes 1 1/2 hours.
