Mexican Street Corn Deviled Eggs

Ingredients

6-8 hard-boiled eggs, peeled and yolk separated

1/4 red onion, finely chopped

1 jalapeño, finely chopped

1 cup roasted corn

1/2 lime, juiced

2 tablespoons sour cream

3 tablespoons mayo

1/2 teaspoon tajin, plus more for dipping

1 tablespoon chopped cilantro

1/4 cup cotija or parmesan cheese

Salt and pepper to taste

Directions

Step 1

Season your egg whites with tajin in a bowl. Set aside.

Step 2

Combine the egg yolks, red onion, jalapeño, corn, lime juice, sour cream, mayonnaise, tajin, cilantro, and cheese. Mix until smooth & creamy.

Step 3

Fill the egg whites with the yolk mixture. Serve fresh!
