Pizza Beans

1 ½ tablespoons olive oil
½ onion, chopped
2 cloves garlic, minced
1 1/2 teaspoons italian seasoning
2 (15-oz) cans butter beans (or white beans), drained and rinsed
22 oz jar marinara sauce
8 oz shredded vegan mozzarella cheese
¼ cup shredded vegan parmesan cheese
Fresh basil
Directions
Preheat the oven to 400 degrees Fahrenheit.
Add the olive oil and onion to an oven safe skillet over medium-high heat. Saute for 3-4 minutes or until translucent.
Stir in the garlic and italian seasoning and saute for another minute.
Stir in the beans and marinara sauce. Bring to a simmer for 2-3 minutes. Turn off the heat and top with the mozzarella cheese and parmesan.
Bake for 15 minutes or until the cheese has fully melted. Garnish with fresh basil and red pepper flakes. Serve with sourdough or garlic bread for dipping.
