For crepes:

60g oat flour

15g protein powder

1 egg

20g powdered sugar

1 tsp vanilla extract

1 pinch of salt

150ml oatly

125ml sparkling water


For filling:

40g cottage cheese

17g greek yogurt

1 tsp vanilla extract

7g powdered sugar


1. Mix the egg and sugar in a bowl

2. Add the oat flour, protein powder and salt, followed by the milk. Mix thoroughly

3. Add the sparkling water

4. Let the batter sit for 10 minutes (optional)

5. Mix the ingredients together for the filling

6. Run the pan at around 60% - 70%

7. Lightly coat the pan with butter

8. Put a ladleful of the batter in the pan, gradually (not all at once) in circular motions

9. Flip it after 1 - 2 minutes, and repeat on the other side
