Ingredients

1 tsp extra-virgin olive oil

1 chicken breast, cut into thin strips

⅔ cup/70g broccoli, cut into small florets

2 garlic cloves, finely chopped

½ tsp paprika

½ tsp dried mixed herbs

3¼ oz/90g fresh penne or other short pasta

½ cup/125ml chicken stock/broth

3 tbsp heavy cream

¼ cup/25g Parmesan, grated small handful (2 tbsp/5g) of finely chopped fresh parsley black pepper

To serve:

bread, to mop up the sauce

Directions

Heat the oil in a saucepan over medium heat. Once hot, add in the

chicken, broccoli, garlic, paprika, and mixed herbs and season with pepper. Sauté for 4 to 5 minutes until the chicken has some color but isn't cooked all the way through.

Add in the pasta, chicken stock/broth, cream, and Parmesan. Give it a good stir and let it simmer for 4 to 5 minutes until the pasta and the chicken are cooked and the sauce has thickened slightly. Add in the fresh parsley and stir through before serving. Mop up any extra sauce with a piece of bread.
