4 pieces Boneless, Skinless Chicken Breasts (Thighs are a flavorful substitute.)
1 cup Sour Cream (Greek yogurt is a healthy substitute.)
2 tablespoons Cornstarch (Can substitute with all-purpose flour.)
1 teaspoon Dried Oregano (Italian seasoning or dried basil can be used.)
1 teaspoon Garlic Powder (Fresh minced garlic can substitute for a stronger flavor.)
1 teaspoon Salt
1 teaspoon Pepper
1 cup Grated Parmesan Cheese (Freshly grated is best.)
2 cups Mozzarella Cheese (Fresh or regular slices work for melting.)
Directions
How to Make Smothered Cheesy Sour Cream Chicken
Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
Place the boneless, skinless chicken breasts in the baking dish in a single, even layer.
In a medium bowl, combine sour cream, half of the grated Parmesan cheese, cornstarch, oregano, garlic powder, salt, and pepper. Stir until smooth.
Generously place a slice of mozzarella cheese on top of each piece of chicken.
Evenly spread the creamy sauce mixture over the chicken and top with remaining Parmesan cheese.
Bake for about 60 minutes, or until chicken reaches 165°F (74°C) and cheese is golden.
Allow the dish to rest for a few minutes before serving.
