For the salad:
2 heads of romaine lettuce
1 head of cabbage
1 cucumber
A handful of spring onions (white part)
A handful of sprouts
1 tin of chickpeas (rinsed)
For the dressing:
1 cup of cashews (soaked in boiling water for 20 minutes)
1 block of silken tofu
1/2 cup nutritional yeast
A handful of spring onions (green part)
A handful of chives, mint & dill
1 tsp dijon mustard
1 garlic clove
Juice of 1 lemon
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
A glug of good quality olive oil
3/4 cup water
Serve with tortilla chips and enjoy! 🌱🫶🏼
