High Protein Creamy Lasagna Soup

1 lb lean ground beef
1 small onion
2-3 garlic cloves (minced)
1 tbsp tomato paste
1 tsp Italian seasoning, salt + pepper
1 jar Rao’s Marinara
6 cups broth
10 lasagna noodles, broken
1½ cups zucchini, chopped
1 cup plain Greek yogurt
1/4 Mozzarella for topping
Directions
Brown beef with onion, garlic, spices.
Add tomato paste and cook 1 min.
Add Rao’s + broth and bring to a boil.
Add broken noodles and simmer 10–12 min.
Add zucchini and cook 3–4 min.
Turn heat to low.
Temper Greek yogurt with a little hot soup, then stir it in.
Serve and top with mozzarella!
