Slow Cooker Peanut Chicken

1½ lbs boneless, skinless chicken breasts
1 red bell pepper, sliced
½ large yellow onion, diced
3 garlic cloves, minced
For the peanut sauce:
½ cup creamy peanut butter
⅓ cup chicken broth
⅓ cup low-sodium soy sauce
1½ tbsp honey
2 tbsp lime juice, divided
1 tsp rice vinegar
1 tsp sesame oil
1 tsp fresh grated ginger
1½–2 tsp chili garlic paste
½ tsp kosher salt if using unsalted peanut butter
Directions
Add the pepper and onion to your slow cooker and place the chicken breasts on top.
Whisk together the peanut sauce ingredients, using 1 tbsp of the lime juice, and pour over the chicken.
Cook on LOW for 2–2½ hours, starting to check the chicken around 1½–2 hours. Remove it once it reaches 165°F.
Slice or shred the chicken, stir the remaining lime juice into the sauce, then add the chicken back in and toss everything together.
Serve over jasmine rice with chopped peanuts, cilantro, green onions and extra lime.
