275g all-purpose flour
2 eggs
110g ricotta
1/2 cup milk
55g extra virgin olive oil
25g grated Parmigiano Reggiano
16g baking powder
7g sea salt
140g cubed salami
140g cubed mortadella
100g cubed caciocavallo
Directions
In a large bowl, whisk together the eggs, ricotta, milk, & olive oil until smooth
Add in the flour, baking powder, Parmigiano Reggiano, & salt. Mix it until you get a thick, uniform batter
Fold in the cubed salami, mortadella, & caciocavallo until evenly distributed
Lightly grease a ring pan with olive oil
Pour in the batter & level the top with a spatula but don’t pat it down you want to keep it rustic
Bake at 350°F (180°C) for 30-40 min, or until golden & a toothpick comes out clean
Let it cool a bit, then slice & enjoy this rustic Italian classic that’s perfect for the Easter season!
