Ingredients

– 1/4 cup mirin

– 1/4 cup sake

– 1/3 cup miso paste

– 1/3 cup white sugar

– Fish of your choice (cod suggested)

Directions

1. Mix the mirin, sake, miso paste, and sugar in a small saucepan and cook for 2 minutes, stirring until smooth.

2. Let the mixture cool completely.

3. Marinate the fish in the cooled sauce for at least 24 hours.

4. Preheat your oven grill to 240°C (464°F).

5. Grill the marinated fish for 6 minutes, or until cooked through and caramelized.
