Cuban Marinade

Makes 1 pork butt

Grill 1 red bell pepper and 1 jalapeno, then puree.

Combine with:

3 T garlic

1 c white wine vin

3/4 c lime juice

1/2 c grapefruit juice

1/4 c orange juice

2 T dry oregano

6 sprigs fresh oregano

Cut a deep criss-cross pattern into the pork butt and marinate for 24 hours. Add black

pepper and 1 onion, diced to pork before roasting.
