Traditional Cajun Jambalaya Recipe

3 tablespoons Olive Oil (1 tablespoon + 2 tablespoon)
2 pound Boneless Skinless Chicken Breast (cut into 1-inch pieces)
14 oz Andouille Sausage (sliced quarter rounds)
1 cup Bell Pepper (diced)
2 Celery ribs
1 Onion (diced)
4 cloves Garlic (minced)
14 oz Crushed Tomatoes
3 cups Chicken Broth
2 cups Rice (uncooked)
2 tablespoon Cajun Seasoning
1 tablespoon Thyme
1/4 teaspoon Cayenne Pepper
1 Bay Leaf
1 pound Shrimp
1 cup Okra
Directions
Prep:
Cut Boneless Skinless Chicken Breast into 1 inch cubes
Cut Andouille Sausage into quarter rounds
Dice Bell Peppers
Dice Celery
Dice Onion
Mince Garlic
Instructions
Heat Olive Oil in a pan over medium-high heat and cook Chicken and Sausage. Saute the Chicken and Sausage until lightly browned then set aside in a plate
Using the same lot add more olive oil, the Bell Peppers, Celery, Onion, and Garlic and saute until the Onion is translucent.
Add the Crushed Tomatoes, Chicken Broth, Rice, Cajun Seasoning, Thyme, Cayenne, and Bay Leaf and stir until well combined
Bing the mix to a simmer and reduce the heat to medium-low and cover, stirring occasionally till the Rice is nearly cooked through.
Add the Shrimp and Okra and stir to combine. Let mixture simmer occasionally stirring until the Shrimp is cooked through.
Stir in the Chicken and Sausage from earlier and then remove and discard the Bay Leaf.
