High Protein Lemon Blueberry Bread

Ingredients

1 cup powdered egg whites

1 cup water

1 cup blended cottage cheese

1/2 cup blueberries

1/2 cup sweetener (I used allulose)

Juice of 1 lemon

How to make it:

Directions

Set aside a few blueberries and mash them.

Mix the egg whites with water and beat until stiff peaks form. (5 mins)

Fold in the blueberries, cottage cheese, lemon juice, and sweetener.

Pour into a greased, lined loaf pan & top with your mashed blueberries.

Bake at 350F for 30-35 minutes.

Let cool before slicing and enjoy!
