Cowboy Butter Lemon Bowtie Chicken with Broccoli

Ingredients

12 ounces bowtie pasta

2 large chicken breasts cut into bite size pieces

2 cups broccoli florets

4 tablespoons butter

4 garlic cloves minced

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

2 tablespoons chopped parsley

1 tablespoon chopped chives

1 teaspoon paprika

1/2 teaspoon red pepper flakes

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup grated parmesan cheese

Directions

Bring a large pot of salted water to a boil.

In a bowl mix lemon juice, lemon zest, paprika, red pepper flakes, salt, and pepper.

Heat a skillet over medium heat and melt 2 tablespoons butter.

Add chicken pieces and cook until golden and fully cooked. Remove and set aside.

Cook bowtie pasta according to package instructions. Add broccoli during the last two minutes of cooking.

Melt the remaining butter in the skillet with garlic.

Add cooked chicken, drained pasta, and broccoli to the skillet.

Pour in the lemon mixture and toss everything together.

Stir in parmesan cheese, parsley, and chives.

Serve warm with extra herbs and parmesan.
