Easy Taco Cups with Homemade Pico De Gallo and Taco Seasonin

Ingredients for the Pico de Gallo
5 medium diced tomatoes
1/2 diced red onion
1/2 - 1 diced Poblano pepper Use the seeds if you want the pico spicier
2 large cloves of garlic, grated or pressed
3 tbsp fresh squeezed lime juice
1/3 cup chopped cilantro, packed
1/4-1/2 tsp coarse sea salt Measurement should be based on taste
1/4 tsp fresh cracked black pepper
Homemade Taco Seasoning
1 1/2 tbsp chili powder
2 tsp smoked paprika
2 tsp garlic powder
2 tsp ground cumin
1 tsp dried oregano
1 tsp garlic salt
1 tsp onion powder
1/8 tsp ground coriander
2 pinches - 1/4 tsp chipotle chili powder This will make it a little spicier so measurement based on taste.
Ingredients for the Easy Taco Cups
Directions
Spray olive oil or cooking oil
12 small soft shell tacos I like the La Banderita brand.
2-3 cups mixed Chihuahua cheese and Monterey Jack cheese You will use 2-3 tablespoons per taco cup.
2 lbs ground beef You will use about 2-3 tablespoons per cup
Optional: 2 tbsp of corn starch and 2 tbsp of water to make a slurry to thicken the beef mix.
1 spoonful of Pica de Gallo per cup
Additional toppings: Sour cream, jalapeno, additional cilantro, avocado or wedge of lime
