Slow Cooker Chicken Risotto

– 1 cup rice (185 grams) – Arborio rice – 2 larg boneless chicken breasts chopped into small pieces.
– 1 packet of dry chicken noodle soup mix – 1 can of cream of chicken soup – 1/2 large onion, chopped
– 250 gram frozen peas, corn and capsicum(optional)
– 2 cups of water
– Salt and pepper to taste
Directions
Lightly brown chicken and onion in a pan. When lightly brown mix dry chicken noodle soup in with chicken & onion. Lightly spray slow cooker with oil. Put all ingredients into slow cooker. Put on lid and cook on high for 2 to 2.5 hrs depending on your slow cooker.
You can adapt this recipe to make mushroom risotto by using French onion dry soup mix & can of mushroom soup & fresh chopped mushrooms.
