Italian Sausage And Potato Soup

1 lb Italian sausage, crumbled
6 medium potatoes, peeled and cubed
4 cups chicken broth
1 small onion, diced
2 garlic cloves, minced
1 cup heavy cream
2 cups fresh spinach or kale
1 tbsp olive oil
Salt and pepper to taste
Parmesan cheese for garnish
Directions
Cook the Sausage: In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it into small pieces. Remove and set aside.
Sauté Vegetables: In the same pot, sauté onion and garlic until fragrant. Add potatoes and chicken broth, and bring to a boil.
Simmer and Add Sausage: Reduce heat and simmer for 20 minutes until potatoes are tender. Return the sausage to the pot.
Add Cream and Greens: Stir in heavy cream and spinach or kale. Cook for another 5 minutes until greens are wilted.
Serve: Garnish with Parmesan cheese and serve warm.
