Holiday side: Roasted Carrots over Whipped Feta

Ingredients

RECIPE:

1 lb carrots, peeled, I used the rainbow ones from trader joes!

2 tbsp olive oil

Salt & pepper, to taste

2 tsp dried thyme

1 tbsp honey

8oz feta cheese

2 cloves garlic

1/4 cup greek yogurt

Juice of 1/2 lemon

Garnishes- olive oil, pomegranate seeds, chopped fresh parsley, honey, red pepper flakes, orange zest, flaky salt.

Directions

Preheat oven to 400°F.

Toss carrots with olive oil, salt, pepper, and thyme. Lay carrots on foil lined tray and drizzle with honey. Bake for 20–25 mins, until tender and slightly caramelized.

While carrots roast, whip the feta: blend feta, Greek yogurt, garlic, lemon juice until smooth and creamy. Taste and adjust seasoning.

Spread whipped feta along a bowl or plate. Top with roasted carrots. Garnish with parsley, pomegranate seeds, a drizzle of honey, red pepper flakes, orange zest, and flaky salt. ENJOY!!!!
