Mediterranean Orzo Salad

Ingredients

1 1/2 cups dry orzo pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup kalamata olives, sliced

1/2 cup crumbled feta cheese

2 tablespoons fresh parsley, chopped

1/4 cup olive oil

2 tablespoons fresh lemon juice

1 teaspoon dried oregano

1 clove garlic, minced

Salt and black pepper to taste

Directions

Bring a large pot of salted water to a boil and cook orzo until al dente according to package instructions (8–10 minutes).

Drain and rinse lightly under cool water to stop the cooking process (2 minutes).

In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, olives, and parsley (3 minutes).

Add cooled orzo to the bowl and gently toss to combine (2 minutes).

In a small bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper (2 minutes).

Pour dressing over the salad and mix until evenly coated (2 minutes).

Fold in crumbled feta just before serving for the best texture (1 minute).
