Daddy Chocolate Cake
300ml boiling water
1 tsp vanilla essence
300g self raising flour
125g caster sugar
1tsp bicarb soda
2 cups icing sugar
1/3 cup cocoa
Preheat oven to 140c fan forced.
Prepare springform cake tin with baking paper on base.
Grease springform cake tin with butter.
Mix boiling water, butter and vanilla in glass measuring jug.
Pour all dry ingredients into a mixing bowl and whisk until uniform.
When liquids are cold enough to put your finger it comfortably, pour liquids into dry ingredients and whisk until uniform consistency.
Pour cake batter into greased cake tin and bake in oven for 35minutes (check if cake is cracked on top - it could be 50mins, I can’t remember. I’m fairly certain it is 35mins)
