Brown Butter Pumpkin Snickerdoodle

Cookies

1/2 cup unsalted butter, browned and cooled

1/2 cup sugar

1/3 cup brown sugar

1 egg yolk

1/2 cup pumpkin purée

1 tsp vanilla

2 cup all-purpose flour

½ tsp baking soda

½ tsp baking powder

1 tsp cinnamon

½ tsp nutmeg

½ tsp salt

Cinnamon Sugar Coating

1/3 cupsugar

2 tsp cinnamon

Directions

Brown butter and let cool. Mix with sugars, egg yolk, pumpkin, and vanilla.

Whisk dry ingredients and fold into wet until dough comes together. Chill 30 minutes.

Roll dough into balls and coat in cinnamon sugar.

Bake at 350°F for 10–15 minutes until soft and golden. Cool slightly, then enjoy warm with coffee ☕️🍁
