Sweet Potato Rounds with Brie, Cranberries & Toasted Walnuts

Ingredients

2 large sweet potatoes, sliced into ½-inch rounds

2 tbsp olive oil

Salt & pepper to taste

6 oz brie cheese, sliced

½ cup dried cranberries

⅓ cup toasted walnuts, chopped

2 tbsp honey

¼–½ tsp chili flakes

Directions

Preheat oven to 400°F (200°C). <

p id=”instruction-step-3″>3. Arrange on a baking sheet and roast for 22–25 minutes, flipping halfway until edges are golden and centers are soft.
