Beef Salpicao (Filipino Garlic Steak Bites)

Ingredients

3 tablespoons soy sauce

3 tablespoons oyster sauce

1 tablespoon packed dark or light brown sugar

1 teaspoon Worcestershire sauce

1/4 teaspoon freshly ground black pepper

2 tablespoons olive oil

12 cloves garlic, thinly sliced (about 1/2 cup)

2 pounds (1-inch-thick) boneless New York strip steaks, trimmed and cut into 1-inch cubes

2 tablespoons cold unsalted butter, cut into 4 pieces

Thinly sliced scallions, for garnish

Steamed white rice, for serving

Directions

Step 1

Whisk 3 tablespoons soy sauce, 3 tablespoons oyster sauce, 1 tablespoon packed brown sugar, 1 teaspoon Worcestershire sauce, and 1/4 teaspoon black pepper together in a small bowl.

Step 2

Heat 2 tablespoons olive oil in a 12-inch skillet over medium heat until shimmering. Add 12 thinly sliced garlic cloves and cook, stirring often, until light golden brown (reduce the heat as needed so the garlic does not burn), 3 to 4 minutes. Using a slotted spoon, transfer the garlic to a plate.

Step 3

Increase the heat to medium-high. Add 1 pound of the New York strip steak cubes in a single layer. Cook, flipping occasionally, until most of the sides are browned and the steak is just cooked through, 3 to 4 minutes. Transfer to a plate. Repeat cooking the remaining 1 pound steak cubes. Return all the steak cubes and accumulated juices to the skillet.

Step 4

Add the soy sauce mixture and cook, stirring occasionally, for 1 minute. Remove the skillet from the heat. Stir in 2 tablespoons cold unsalted butter pieces and half of the fried garlic until the butter is melted and the sauce is glossy. Garnish with the remaining fried garlic and thinly sliced scallions. Serve with steamed white rice.
