Easy Chicken Karahi

Ingredients

1 3-4 lbs whole chicken cut into small pieces

6 medium tomatoes

1/2 cup ghee

2 tablespoons ginger garlic paste

1 ½ teaspoons salt or to taste

1/2 teaspoon Kashmiri chili powder or paprika

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon black pepper

1/2 teaspoon turmeric powder

1 tablespoon chopped ginger

1 tablespoon red chili flakes

6-8 whole green chilies

1/2 cup yogurt

Garnish:

1 handful chopped cilantro

greens of 2 scallions, chopped

Directions

Score the tomatoes, add hot water and set aside.

Heat the ghee in high flame, add ginger, garlic paste and stir fry for 30 seconds.

Add the chicken and cook on high until the chicken changes color, and most of the moisture is evaporated.

peel and blend the tomatoes. ( not absolutely necessary but makes the curry smooth).

Add all the spices and stir for 30 seconds making sure not to burn the spices.

Add the tomatoes, give it a good mix, cover and cook on high flame for 10 minutes.

Remove the lid and stir fry until most of the moisture is evaporated.

Add the whipped yogurt, and give it a good mix.

Add the whole green chilies, chopped ginger. Then cover and simmer on low for 5 minutes.

Karahi is ready, garnish with chopped cilantro and greens of scallions and enjoy with naan.
