2 T. dijion mustard

¼ c. white vinegar or champagne vinegar

½ c.+ 2 T. olive oil

1 tsp. salt

¼ tsp. black pepper

3 anchovies, minced

3 T. capers, rough chop

1 c. parsley, rough chop

1 red onion, diced and sauteed

1. boil potatoes until just tender
