Arugula, Goat Cheese, Tomato Pasta Salad,

Ingredients

8 oz fusilli or rotini pasta

4 oz goat cheese •

2 tablespoons olive oil

2 tablespoon lemon juice

1/2 tsp salt

1/4 tsp red pepper flakes

black pepper

5-6 oz arugula

I pt cherry tomatoes (sliced)

1/3 cup Kalamata dives (sliced)

Directions

1) Cook pasta untl al dente in large pot of salt Water. Before draining, reserve 1 cup of pasta water. Drain pasta & pour into large serving bowl.

2) Sprinkle crumbled goat cheese over pasta, the drizzle in olive oil & lemon juice. Sprinkle the salt, pepper flakes. & several twists of black pepper on top. Pour 1/3 cup of reserved pasta water over the pasta and toss until evenly coated.

3) Add arugula, tomatoes, & olives. Toss to combine. Add more pasta water if pasta seems dry.
