Turkey Feta Meatballs:
1 lb ground turkey
¼ cup almond flour
1 large egg
¼ cup red onion, small chop
3 garlic cloves, minced
¼ cup feta cheese crumbles (dry, not in liquid)
1 tbsp fresh dill, finely chopped
1 tsp dried oregano
½ tsp salt
1/8 tsp black pepper
Avocado or Olive Oil (for cooking)
Tzatziki Sauce:
1 cup plain Greek yogurt
¼ cup cucumber, grated
1 tbsp fresh dill, small chop
2 garlic cloves, minced
1 tsp lemon juice
½ tsp salt
Pinch of black pepper
Simple Salad:
Cherry tomatoes
Cucumbers
Red onions, chopped
Freshly squeezed lemon juice
Olive oil
Salt
Black pepper
For Serving Bowl:
Cauliflower rice
Olive oil (for garnish)
Freshly chopped dill (for garnish)
Directions
Make the Meatball Mixture:
In a bowl, combine ground turkey, almond flour, egg, chopped red onion, minced garlic, feta cheese crumbles, finely chopped dill, dried oregano, salt, and pepper. Mix everything until very well incorporated.
Prepare & Cook Meatballs:
Portion the mixture into meatballs of roughly the same size. Heat avocado or olive oil in a pan. Shape the portions into meatballs. Cook the meatballs in the hot oil, turning until they are browned on all sides and cooked completely through.
Make the Tzatziki Sauce:
In a separate bowl, combine Greek yogurt, grated cucumber, small chopped fresh dill, minced garlic, lemon juice, salt, and pepper. Mix until everything is incorporated.
Prepare the Salad: Combine cherry tomatoes, cucumbers, chopped red onions, lemon juice, olive oil, salt, and pepper.
Assemble the Bowl: Serve the cooked meatballs over a base of cauliflower rice. Add the tzatziki sauce and the simple salad alongside. Garnish the meatballs with a drizzle of olive oil and freshly chopped dill.
