1¼ cups all-purpose flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon baking soda

¼ teaspoon salt

4 medium ripe bananas, mashed

2 large eggs

⅔ cup nonfat plain Greek yogurt

⅓ cup almond butter

½ teaspoon vanilla extract

Directions

Preheat oven to 350°F. Coat a 9-by-5-inch loaf pan with cooking spray.

Whisk 1¼ cups flour, 1 teaspoon baking powder, 1 teaspoon cinnamon, ½ teaspoon baking soda and ¼ teaspoon salt in a medium bowl.

Place mashed bananas, 2 eggs, ⅔ cup yogurt, ⅓ cup almond butter and ½ teaspoon vanilla in a large bowl; beat with an electric mixer on medium-high speed until well combined. Add the flour mixture; beat on low speed until just combined. Pour the batter into the prepared loaf pan.

Bake until a wooden pick inserted in the center comes out clean, 45 to 50 minutes. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
