Ingredients

2 pints cherry tomatoes sliced

2 lemons

1 box of pasta (16 oz)

Parmesean cheese (to taste)

Olive oil

1/2 cup pasta water

1 bag spinach

Minced garlic to taste (2 TBSP)

Red pepper flakes

Parsely

Basil

Salt and Pepper

Directions

Cook pasta to box directions

Slice tomatoes in half

Heat up pan and put olive oil in. Throw in tomatoes and cook until skin starts to wilt off. Then add minced garlic and cook 2-4 more minutes.

In separate bowl zest 1 lemon and juice both lemons. Stir in parmesean cheese.

Transfer tomatoes to bowl with lemon and parmesean cheese and pour in 1/2 cup pasta water. Imersion blend (or place in a blender) add red pepper flakes, basil, parsely, salt, and pepper.

Put tomato mixture back on stove and simmer, add spinach to wilt.

Drain pasta and combine with tomato mixture.
