• 3-4 large Honeycrisp apples, diced • 3 tbsp maple syrup • 2 tsp cinnamon • 1/2 tsp salt • 3 scoops vanilla protein powder • 1 cup old-fashioned oats • 1 cup oat flour • 1/2 cup nonfat greek yogurt • 2 tbsp honey • juice of 1/2 lemon (add zest for extra flavor)

OPTIONAL (for texture) • 1/4 cup milk (any kind, add only if the mixture is too dry)
Directions
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. Cook apples: Heat and mix diced apples with maple syrup, cinnamon, lemon juice, lemon zest (if desired), and salt for 6-8 min until soft.
3. Make dough: Mix protein powder, honey, oat flour, oats, and greek yogurt. It'll be thick and wet.
4. Combine: Fold in the apples. Scoop into 10 balls and place on the baking sheet.
5. Bake for 12 minutes.

Notes: Don't over-bake. Pull them out while still soft-ish. Store in a container on the counter (they'll get moist after a day) or freeze and microwave for 10-15 seconds. If overly dry, add a splash of milk. If overly wet, add a bit more oat flour.
