Miso Tare Ramen

Ingredients

1 cup chicken stock

3 cup water

1/2 onion, finely chopped

2 clove garlic, minced

1 Tbsp ginger root, grated

1 green onion, chopped

2 Tbsp peanut butter

3 Tbsp mirin

1 tsp chili oil

2/3 cup white miso paste

Ramen noodles, Prepare by package instructions

Directions

Add the chicken stock and water to a pot and bring to a boil. Change the ratio with more chicken stock for a richer flavor.

Add the onion, green onion, ginger, and garlic to a pan and cook until softened. Add to the boiling stock along with the peanut butter, mirin chili oil, and miso paste. Mix well and cook until the liquid has reduced to desired thickness. Optionally, remove from heat and use an immersion blender to make the broth smooth and creamy.

Cook the ramen noodles and any accoutrements as usual. Add additional chili oil for a spicier broth.
