Lemon Pesto Chicken Pasta

1 ½ lbs boneless, skinless chicken breasts or thighs
1/2 cup basil pesto
Juice of 1 lemon (about 3 tbsp)
Zest of 1 lemon (optional)
1/4 cup chicken broth or water
1 tsp garlic powder
Salt & pepper to taste
6 oz uncooked angel hair pasta (about 1/2 a box)
1/4 cup grated Parmesan cheese (optional)
Fresh basil or parsley (optional, for garnish)
Directions
Instructions: Add to Slow Cooker: Place chicken in the slow cooker. Pour over pesto, lemon juice,
lemon zest, broth, garlic powder, salt, and pepper. Cover and cook on HIGH for 3–4 hours or LOW for 6–7 hours until chicken is tender and shreds easily. Remove chicken w/ slotted spoon, set aside. Add Pasta: Break uncooked angel hair in half and stir into the hot juices. Make sure it’s submerged. Cook Pasta: Cover and cook on HIGH for 10–12 minutes. Stir once halfway through.
Finish:Add chicken back w/ pasta. Stir in Parmesan, adjust seasoning, and garnish with fresh herbs.
