Almond Biscottis

1/3 cup oil
2 eggs
3/4 cup sugar
1 tsp vanilla
2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup whole almonds
Directions
Preheat oven to 350°F. Line a baking sheet with parchment paper.
In a bowl, mix oil, eggs, sugar, and vanilla until smooth.
Add flour, baking powder, salt, and almonds. Mix with your hands until a soft, smooth, non-sticky dough forms.
Transfer dough to the baking sheet and divide in half. Shape into two logs and gently flatten.
Bake for 20 minutes, just until set. Remove and let cool for 20 minutes.
Slice into 1 cm thick pieces.
Lower oven to 325°F. Place biscotti cut-side down and bake for 10–12 minutes.
Flip and bake another 8–10 minutes until lightly golden and crisp.
