Rice Cakes Bites

Ingredients

6 plain rice cakes

1 cup chocolate chips (semi sweet or milk)

2 tsp oil

2 tbsp peanut butter (heat gently in microwave just until pourable)

Directions

Add oil to chocolate chips and microwave for approximately 1 minute on medium heat or until chocolate is almost melted. Stir until smooth.

In a large bowl break rice cakes into small pieces. Add melted chocolate and mix until combined, press into an 8” x8” square pan sprayed with oil.

Press mixture firmly into pan, then drizzle peanut butter over top.

Freeze for about 20 minutes or until hard. Invert from pan and cut into small pieces. Keep frozen for best texture. Enjoy!
