Ingredients

313g bread flour (100 grams whole wheat 213 white bread flour)

24g sugar

1 tsp salt

2 tsp yeast

226g sourdough discard

120g warmed milk (May replace with almond milk)

75g melted butter or oil

1 egg

Buns, Rolls or Pigin the blanket, or pull apart garlic bread

*Milk for milk-wash /egg for egg-wash/or favorite seed topping

Directions

In a large bowl stir in all the dry ingredients. Add the wet ingredients mix until the dough forms. Knead for 6-8 min in a mixer. The dough should be tacky.

-Cover and let rise in warm place until doubled. About an hour (longer if it's cooler)

-Divide dough into 6 -8 pieces and shape into round balls. Roll in seed topping (optional). Place on baking sheet lined with parchment paper for a second rise -

20-30min or until almost doubled and puffy. Preheat oven to 350. 180 °C

-Once the buns are ready to bake, brush gently with some milk or egg wash and bake for 20-25 min until lightly browned and done.

-Preferably let it rest 10-15 min before cutting it open and making your delicious burger...or sandwich.

It's the same recipe as the dinner rolls but I just made it into burger buns
