Green Chili

Pork roast
Green chilies
Flour
2 cans regular rotel tomatoes
1 can rotel tomato habanero (if you don’t want hot don’t use)
Onion
Garlic
Salt and pepper
Cavendars
Cumin
Directions
Cut pork roast into bite size chunks
Add some flour, salt and pepper to a zip lock bag
Add pork to the zip lock bag and coat the pork with flour. Set aside
Chop onion
Sauté onion and some garlic until translucent in vegetable oil
Remove onion and garlic from pan. Add to crock pot.
Add oil to pan enough to brown but also coat the pork mixture. Brown in batches. Once browned add to crock pot. (Note: if your crock pot browns, use instead of in separate pan) (continue to add oil if needed to ensure meat is coated as it browns)
Chop up chilies and add to the meat mixture in crock pot.
Add cans of tomatoes to crock pot
After adding all ingredients to crock pot add enough water to cover ingredients. Stir just enough to mix.
Add cumin, cavendars, salt and pepper.
Cook on low for 8 hours. If it looks thick add more water as it cooks.
After chili has cooked, taste and adjust spices as needed.
If you want thicker use more flour when coating. If you want thinner chili add more water as it cooks.
Serve as is or make into green chili stew.
Stew: add cans of beans and potato’s. May need to adjust seasoning.
