Shrimp Scampi Pasta Meal Prep

Ingredients

20oz Extra Large Shrimp

10oz Protein Pasta

3 Tbsp Light Butter

56g Parmesan Cheese

3/4 Cup Chicken Broth

4 Garlic Cloves

Fresh Parsley

Lemon Zest & Lemon Juice

Directions

Boil Pasta Until Al Dente & Save pasta water.

On Medium-High, add 1 Tbsp light butter to skillet and saute shrimp for 2 minutes each side.

Remove shrimp DONT clean skillet.

Add Chicken broth, 2 Tbsp Light Butter, Garlic, Lemon Zest & Juice, Parsley & Red pepper flakes.

Bring to a simmer.

Add cooked pasta & Shrimp to sauce.

Stir in Parmesan & Pasta Water until thickened.

Top with More lemon Juice & Parsley.

Divide Evenly 3 Ways.

Serve & Enjoy!
