Cinnamon Roll Muffins

DOUGH:
2-3c all purpose unbleached flour
1c buttermilk (or milk + vinegar)
1 egg
1tsp baking soda
1/2tsp salt
1/2tsp pure vanilla
1/2c brown sugar
FILLING:
1tbsp cinnamon
2tbsp butter
2/3c brown sugar
GLAZE:
1/2c powdered sugar
1-2tbsp milk or cream
Dash of vanilla
Directions
Preheat oven to 350°. Mix the wet ingredients together for the dough in a large bowl. Slowly add in the flour until it comes together. Roll dough out into approx a 12x18 rectangle. Spread filling on top. Roll into a log, cut 12 equal pieces. Place in your muffin tin, bake for 13-15 minutes.
Let them cool slightly before drizzling glaze on top. Enjoy!
