Honey-garlic prawn rice bowls

2 × 250g packs of microwave basmati or long-grain rice
1 tsp oil
1 tsp unsalted butter
300g raw king prawns, peeled and deveined
¼ tsp salt
¼ tsp ground black pepper
½ tsp paprika
2 garlic cloves, minced
3 tbsp light soy sauce
4 tosp honey
½ cucumber, thinly sliced
1 avocado, chopped into chunks
½ small red onion, finely diced
1 tbsp mixed black and white sesame seeds
3 tbsp chopped coriander
Directions
1 Heat the microwave rice according to pack instructions - it can be left in the pack for a few minutes while you cook the prawns.
2 Heat the oil and butter in a frying pan over a high heat until the butter starts to bubble.
3 Season the prawns with the salt, pepper and paprika, then add to the pan and fry, turning often with a spatula, for 1-2 mins or until the prawns start to turn pink.
4 Reduce the heat to medium and add the garlic. Stir together for a further minute, then add the soy sauce and honey. Stir together for a further minute, then turn off the heat..
5 Divide the rice between bowls. Arrange the honey-garlic prawns on top, along with the cucumber, avocado and red onion. Drizzle any sauce left in the pan over the prawns and rice.
6 Sprinkle over the sesame seeds and coriander, and serve.
